Juice concentrate is suited to recognisable juice-led profiles; the fruit concentrate group contains specialised clear, low-pulp, with-cells and ratio-defined grades; comminuted orange is selected when broader whole-fruit and peel character is required. Brix indicates soluble-solids concentration. Ratio describes the relationship between soluble solids and titratable acidity and helps compare sweetness-acidity balance. Neither value alone defines flavour, colour, cloud or pulp, so the current technical data sheet and a representative sample should guide approval.
Clear concentrates are intended for products where low turbidity and sediment matter. Low-pulp grades support a smoother mouthfeel, while with-cells and comminuted products provide more visible fruit texture and body. Stability, suspension and process performance should be tested in the finished recipe.
